The present study showed that the bacteriocin of Lactobacillus fermentum (L 2 strain) is a protein with antimicrobial effects on some entero pathogens suggests that bacteriocinogenic Lactobacillus fermentum (L 2 strain) with probiotic properties could potentially be used as a protective culture for the improvement of the microbial safety of foods that can reduce food contamination which causes illness to human beings. The Lactobacillus fermentum (L 2 strain) could provide significant health benefits and enhance the safety of the products as a biopreservative and as a probiotic.the potential of bacteriocin to inhibit enteropathogens is of crucial interest where some of the pathogenic bacteria can produce toxins resulting in human illness. As a consequence of diverse array of bacteriocinogenic Lactobacillus that are available, there is great potential for the use of cultures as biopreservatives in food.
