Other reasons for demand for noodles include affordability, convenience, ease of storage and increased shelf-life. Therefore, the development of a new noodles with various health benefits may increase its market value as well as can be a good health supplement for consumers. Glycemic index plays a vital role in food products. Glycemic index decides the blood sugar levels. Diabetes is the major health problem in India. If higher the glycemic index in the food, causes increases the blood sugar level leads to diabetes. To control the problem the optimal amount of raw materials are added to maintain the glycemic index to be low. The consumers now-a-days not only eat food for taste and need but try to balance the diet and maintain proper health.
