Nutritional assessment, as we all know, is essential in the area of nutrition, since it is through it that we know the state of health of the individual. The clinical exploration contributes a great part in this evaluation by the physical signs and symptoms based on the observation of those clinical changes related to an inadequate dietary intake, scarce or excessive, maintained in time and that can be detected in superficial epithelial tissues, organs and systems easily accessible to the physical exploration.
