There is stiff competition between man and animals particularly the monogastrics for grains and tubers which are major sources of food. In order to ameliorate this problem, previous researchers have advocated for the use of alternative feed sources for livestock. Therefore, there is need to properly harness any abundant, readily available and cheap agro-industrial by-products such as cassava peels as a replacement for maize in pig diets. Cassava peel meal (CPM) has been reported to be good source of energy and minerals. However, if untreated, is fibrous and contains high concentration of cyanide which is hazardous to man and animals. MaxigrainR enzyme has been reported to hydrolyse glycosidic bond thereby releasing energy, amino acids and minerals from fibrous diets. This book, therefore, explores the link to the inconsequential use of cassava peels as good alternative to ever expensive grains.
