Tannin acyl hydrolase, well known as tannase, catalyzes the hydrolysis of tannins into its simpler forms gallic acid and glucose. For the past several years, the tannase enzyme have been extensively used in food, leather and pharmaceutical industries to breakdown the tannins. In food industry, the enzyme is being used for clarification of wines, fruit juices, and manufacture of instant tea, which helps to improve the food quality by reducing the antinutritional components. Tannase enzyme was used for the treatment of tannin-rich effluents in leather processing units or industries.
